There are several main types of biryani, each of which is unique to a particular community. Each variety is named after the location where it was developed.
Mughlai Biryani: This richly flavored biryani is made with curd, chicken, almond paste, ghee, dry fruits, and green chilies.
Ambur Biryani: One of the most famous types of biryani is made in this leather-tanning city in Tamil Nadu, and the town has more biryani shops than any other city in the world. The meat and rice are cooked separately and then combined with mint leaves and curd.
Hyderabadi Biryani: This is one of the most popular types of biryani in India. It has goat meat that has been marinated and cooked alongside the rice, and it is seasoned with coconut and saffron.
Malabar Biriyani: This is the only type of biryani available in Kerala, India. It is a popular dish among the Malabar Muslim community and is made with Khyma rice and ghee.
Kolkata Biryani: This biryani is mostly made of potatoes and eggs, with some meat thrown in for good measure. The marinade contains cinnamon, nutmeg, cloves, cardamom, and other spices, and the rice is flavored with ketaki or rose water and is yellow in color.
Sindhi Biryani: This aromatic biryani is popular in Pakistan and is known for its spicy flavor, fragrant rice, and tender meat. It's made with beef, basmati rice, vegetables, and a variety of spices.
Lucknowi Biryani: Based on a Persian cooking style, this type of biryani employs the dum pukht method, in which the meat and gravy are only partially cooked before being layered and served in a sealed handi. The spice profile isn't as strong.
Kalyani Biryani: This less expensive biryani contains small chunks of buffalo meat. It is rich and flavorful without the use of more expensive ingredients.
